Rich, slow-braised duck legs surrounded by tender root vegetables and fragrant herbs — this stew is the kind of deeply satisfying cold-weather cooking that feels like it took serious skill but mostly just takes patience. The sear on the duck skin builds a gorgeous golden crust before everything gets nestled into a braising liquid of pomegranate juice, apple cider vinegar, and bone broth, creating a broth that's tangy, savory, and just a little sweet. Carrots, parsnips, and turnips soak up every bit of that flavor as they cook down alongside rosemary, thyme, and bay leaves. For anyone avoiding xanthan gum, this recipe is naturally in the clear — the broth thickens on its own from the rendered duck fat and collagen-rich bone broth, with zero need for any gums or stabilizers. That's a real win, since many store-bought broths and spice blends sneak in additives that can be hard to spot on a label. Everything here is straightforward and whole: real aromatics, real fat, real vegetables. Finish each bowl with a scatter of fresh parsley and you've got a stew that looks and tastes like it came straight out of a French farmhouse kitchen.

Pat the duck legs thoroughly dry with paper towels. In a small bowl, combine 3/4 tsp of the salt, the turmeric, and the ginger, then rub the mixture evenly over all sides of the duck legs.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3–4 minutes, until browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered fat from the pot.
