Rich, deeply savory, and built entirely around whole ingredients, this braised duck stew is the kind of one-pot meal that makes a cold evening feel like a special occasion. Duck legs are seared in coconut oil until the skin turns a deep, crackling gold, then slow-braised over low heat with carrots, parsnips, and turnips until the meat is falling-off-the-bone tender. Pomegranate juice and apple cider vinegar bring a subtle brightness to the broth that balances the richness of the duck beautifully, while fresh rosemary, thyme, and bay leaves layer in that unmistakable slow-cooked depth. Turmeric and ginger in the spice rub add warmth without overwhelming the dish — just enough to make you wonder what that intriguing undertone is. Every ingredient here is straightforward and easy to source, with no hidden sauces or pre-made stocks that might sneak in unwanted allergens. If you're navigating shellfish concerns, this recipe is naturally in the clear — no seafood-derived ingredients, broths, or condiments anywhere in the pot. Finish each bowl with a scatter of fresh parsley and you've got a stunning, hearty stew that looks and tastes like it took far more effort than it did.

Pat the duck legs thoroughly dry with paper towels. In a small bowl, combine 3/4 tsp of the salt, the turmeric, and the ginger, then rub the mixture evenly over all sides of the duck legs.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3–4 minutes, until browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered fat from the pot.
