Duck is a brilliant centerpiece for a hearty braise precisely because it brings rich, deeply savory flavor without any of the red meat that so many people need to avoid. The legs get rubbed with turmeric and ginger before being seared in coconut oil until the skin turns a deep, crackling gold — that step alone builds the kind of flavor base that makes the whole pot sing. From there, carrots, parsnips, and turnips soak up a braising liquid built on pomegranate juice, apple cider vinegar, and bone broth, which gives the stew a subtle sweet-tart depth that feels genuinely special. Fresh rosemary, thyme, and bay leaves perfume everything as it slow-braises low and slow until the meat is falling-off-the-bone tender. Every ingredient here is straightforward and naturally free from beef, pork, or lamb, so there's no need to scrutinize labels or swap anything out — the recipe just works as written. Finished with a scatter of fresh parsley, it's the kind of bowl that looks like it took serious effort but mostly just asked you to be patient. Whether you're cooking for someone with a red meat sensitivity or simply want a warming, aromatic stew that's a little out of the ordinary, this one absolutely delivers.

Pat the duck legs thoroughly dry with paper towels. In a small bowl, combine 3/4 tsp of the salt, the turmeric, and the ginger, then rub the mixture evenly over all sides of the duck legs.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3–4 minutes, until browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered fat from the pot.
