Rich, slow-braised duck stew is the kind of meal that makes a whole afternoon of cooking feel completely worth it. The duck legs get a fragrant rub of turmeric and ginger before being seared until the skin turns a deep, crackling gold — that step alone builds incredible flavor before the braise even begins. Pomegranate juice and apple cider vinegar give the braising liquid a subtle tartness that balances the richness of the duck beautifully, while rosemary, thyme, and bay leaves weave through every bite. Carrots, parsnips, and turnips soak up all of that savory broth as they soften, turning the pot into something that tastes like it came from a serious restaurant kitchen. The whole thing braises low and slow until the meat is falling-off-the-bone tender and the vegetables are silky and deeply flavored. Because every ingredient here is whole and straightforward — no spice blends, no packaged shortcuts — you never have to second-guess what's in the pot or worry about hidden cross-contact from tree nuts. Finish each bowl with a handful of fresh parsley and you've got a stunning, deeply satisfying stew that's as clean as it is impressive.

Pat the duck legs thoroughly dry with paper towels. In a small bowl, combine 3/4 tsp of the salt, the turmeric, and the ginger, then rub the mixture evenly over all sides of the duck legs.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3–4 minutes, until browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered fat from the pot.
