Rich, slow-braised duck is the kind of dish that feels like a reward, and this stew delivers deep, savory flavor without a single tomato, pepper, or potato in sight. That matters more than it sounds — so many hearty stews and braises lean on nightshade vegetables as their backbone, which means people avoiding them often have to sit out the most comforting meals of the season. Here, carrots, parsnips, and turnips step in beautifully, soaking up the braising liquid and turning silky and sweet after nearly two hours in the pot. The liquid itself is something special: bone broth, pomegranate juice, and apple cider vinegar create a braise that's tangy, slightly fruity, and deeply savory all at once. A rub of turmeric and ginger on the duck legs adds warmth and color before they ever hit the pan, and the long sear builds a golden, crackling skin that holds up through the whole braise. Fresh rosemary, thyme, and bay leaves do the heavy aromatic lifting, so by the time you pull the lid off, the kitchen smells absolutely incredible. Scatter a little parsley over the top before serving and you've got a bowl that looks and tastes like it came from a serious restaurant kitchen.

Pat the duck legs thoroughly dry with paper towels. In a small bowl, combine 3/4 tsp of the salt, the turmeric, and the ginger, then rub the mixture evenly over all sides of the duck legs.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3–4 minutes, until browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered fat from the pot.
