Rich, slow-braised duck legs surrounded by tender root vegetables and a deeply savory broth — this is cold-weather comfort food at its most satisfying. The braising liquid gets its complexity from pomegranate juice, apple cider vinegar, and bone broth, layered with fresh rosemary, thyme, and bay leaves that perfume the whole pot as it simmers low and slow. A rub of turmeric and ginger gives the duck a warm, aromatic crust before it ever hits the pan, and that long golden sear locks in flavor that carries through every spoonful. For anyone navigating gelatin-free eating, stews and braises can be tricky territory since many store-bought broths and packaged shortcuts rely on gelatin as a thickener — here, the broth stays naturally thin and clean, with no hidden additives to worry about. The carrots, parsnips, and turnips soak up all that braising liquid beautifully, turning buttery soft while still holding their shape. A handful of fresh parsley scattered over the top at the end adds a bright, herby finish that cuts through the richness just enough. This is the kind of one-pot meal that makes the whole house smell incredible and tastes even better than it looks.

Pat the duck legs thoroughly dry with paper towels. In a small bowl, combine 3/4 tsp of the salt, the turmeric, and the ginger, then rub the mixture evenly over all sides of the duck legs.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3–4 minutes, until browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered fat from the pot.
