Rich, slow-braised duck stew is the kind of deeply satisfying cold-weather cooking that feels almost impossible to find ready-made without a long list of additives tucked into the broth or seasoning blends. This version keeps everything completely clean — every ingredient is whole and recognizable, from the smashed garlic and fresh rosemary to the pomegranate juice and apple cider vinegar that give the braising liquid a subtle, fruity depth. The duck legs are seared in coconut oil until the skin turns a deep, crackling gold before being nestled back into the pot with carrots, parsnips, and turnips to braise low and slow until the meat practically falls off the bone. Bone broth forms the backbone of the stew, building a naturally rich, collagen-forward liquid that thickens beautifully on its own — no lecithin, no stabilizers, no shortcuts needed. Turmeric and ginger in the spice rub add warmth and color without leaning on any pre-mixed blends that might sneak in unwanted additives. The result is a bowl that's hearty, aromatic, and genuinely restaurant-worthy, finished with a scatter of fresh parsley if you want a little brightness on top.

Pat the duck legs thoroughly dry with paper towels. In a small bowl, combine 3/4 tsp of the salt, the turmeric, and the ginger, then rub the mixture evenly over all sides of the duck legs.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3–4 minutes, until browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered fat from the pot.
