Rich, deeply savory, and built around bold aromatics, this braised duck stew is the kind of cold-weather cooking that makes the whole kitchen smell incredible. Duck legs are seared until the skin turns a deep, crackling gold before being nestled into a fragrant broth of pomegranate juice, apple cider vinegar, bone broth, and a tangle of fresh rosemary, thyme, and bay leaves — no citrus required. The braising liquid gets its brightness from pomegranate and a splash of apple cider vinegar, so there's genuine depth and a gentle tang without a drop of orange, lemon, or lime anywhere in the pot. Carrots, parsnips, and turnips soak up all that savory goodness as they cook low and slow alongside the duck, turning buttery-soft by the time the meat is falling off the bone. A rub of turmeric and ginger gives the duck legs a warm, subtly spiced crust that plays beautifully against the herby broth. It's a stew that feels genuinely luxurious but comes together in one Dutch oven with straightforward steps — a serious dinner that doesn't ask much of you beyond a little patience.

Pat the duck legs thoroughly dry with paper towels. In a small bowl, combine 3/4 tsp of the salt, the turmeric, and the ginger, then rub the mixture evenly over all sides of the duck legs.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3–4 minutes, until browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered fat from the pot.
