Rich, slow-braised duck stew is exactly the kind of deeply satisfying comfort food that can feel off-limits when you're navigating a citric acid sensitivity — so many store-bought broths, seasonings, and sauces sneak it in under vague labeling. This recipe sidesteps all of that by building its flavor entirely from whole, straightforward ingredients you can verify yourself. The duck legs are rubbed with sea salt, turmeric, and ginger before getting a long, golden sear in coconut oil, which lays down a serious flavor foundation before the braising even begins. Pomegranate juice and apple cider vinegar bring a gentle brightness to the broth without relying on citric acid as a preservative or additive, while bone broth, rosemary, thyme, and bay leaves round everything out into something that tastes like it simmered all day — because it did. Chunks of carrot, parsnip, and turnip soak up the braising liquid and become impossibly tender alongside the fall-off-the-bone duck. A scatter of fresh parsley at the end adds a little color and freshness that makes the whole bowl feel finished and special. This is the kind of stew that earns a permanent spot in your cold-weather rotation.

Pat the duck legs thoroughly dry with paper towels. In a small bowl, combine 3/4 tsp of the salt, the turmeric, and the ginger, then rub the mixture evenly over all sides of the duck legs.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3–4 minutes, until browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered fat from the pot.
