Duck is one of those proteins that feels special without requiring a special occasion, and this slow-braised stew delivers deep, satisfying flavor from ingredients that are entirely free of mammalian meat and dairy. For anyone managing alpha-gal syndrome, finding a hearty, warming stew that doesn't rely on beef, pork, or cream can feel like a real challenge — this one solves that completely. The duck legs are rubbed with turmeric and ginger before being seared in coconut oil until the skin turns a gorgeous deep golden brown, building a savory base that carries the whole dish. Carrots, parsnips, and turnips soak up a braising liquid made from pomegranate juice, apple cider vinegar, and bone broth, turning tender and richly flavored over nearly two hours of low, gentle heat. Fresh rosemary, thyme, and bay leaves do the heavy lifting on aromatics, so every spoonful tastes layered and complex without a single ingredient that could trigger a reaction. The result is fall-off-the-bone duck nestled in a glossy, herb-scented broth that's as comforting as any classic stew you've ever made. A scatter of fresh parsley at the end brightens everything up and makes it look as good as it tastes.

Pat the duck legs thoroughly dry with paper towels. In a small bowl, combine 3/4 tsp of the salt, the turmeric, and the ginger, then rub the mixture evenly over all sides of the duck legs.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the duck legs skin-side down and sear undisturbed for 6–8 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3–4 minutes, until browned. Transfer the duck legs to a plate and set aside. Pour off all but about 1 tbsp of the rendered fat from the pot.
