Braised short ribs are the kind of dish that makes a whole house smell incredible, and this version delivers deep, slow-cooked richness without a single additive or synthetic ingredient in sight. The seasoning blend of turmeric and ginger gives the meat a warm, earthy crust before it ever hits the pot, and searing in coconut oil builds a gorgeous fond that becomes the backbone of the braising liquid. Pomegranate juice and apple cider vinegar bring a subtle brightness that balances the richness of the beef, while coconut aminos add savory depth in place of anything processed or emulsifier-laden. Fresh rosemary and thyme do the heavy lifting on aromatics, so there's no need for packaged spice blends or store-bought sauces that often sneak in unwanted additives. The long, low oven braise does the rest — by the time the lid comes off, the meat is falling off the bone and the vegetables have soaked up every bit of that fragrant, glossy liquid. It's a genuinely impressive centerpiece that happens to be built entirely from whole, clean ingredients you can trust.

Preheat the oven to 325°F (165°C). Pat the short ribs completely dry with paper towels. In a small bowl, combine the salt, turmeric, and ginger, then rub the mixture evenly over all sides of the ribs.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Working in two batches to avoid crowding, sear the short ribs for 3–4 minutes per side until deeply browned on all four sides, then transfer to a plate. Pour off all but about 1 tablespoon of fat from the pot.
