Slow-braised pulled pork doesn't need any thickeners or stabilizers to be absolutely spectacular, and this Dutch oven version proves exactly that. A fragrant rub of fresh rosemary, turmeric, ginger, and Ceylon cinnamon gets pressed into a bone-in pork shoulder before it's seared in coconut oil until deeply golden — that crust alone is worth the effort. The braising liquid is where things get really interesting: pomegranate juice, apple cider vinegar, bone broth, and honey create a rich, tangy-sweet bath that slowly transforms the meat into something impossibly tender over several hours in the oven. Every ingredient here is whole and straightforward, so there's no need to scrutinize labels for hidden gums or additives that often sneak into bottled sauces and spice blends. Once the pork hits 195°F and shreds with zero resistance, you toss it back into those concentrated pan juices and the result is deeply savory, lightly sweet, and layered with herbal warmth. It's the kind of low-effort, high-reward cooking that makes your kitchen smell incredible all afternoon and leaves everyone at the table genuinely impressed.

Preheat the oven to 325°F (165°C). Pat the pork shoulder completely dry with paper towels. In a small bowl, combine the salt, chopped rosemary, turmeric, ginger, and Ceylon cinnamon. Rub the spice mixture all over the pork, pressing it into any crevices.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the pork shoulder and sear, turning with tongs every 3–4 minutes, until deeply browned on all sides, about 12–15 minutes total. Transfer the pork to a plate.
