Slow-braised pulled pork doesn't get much better than this — a bone-in shoulder rubbed with fragrant rosemary, turmeric, ginger, and Ceylon cinnamon, then nestled into a braising liquid of pomegranate juice, apple cider vinegar, bone broth, and honey. The result is deeply savory, subtly sweet, and fall-apart tender in the best possible way. Lupin — a legume increasingly used as a flour or protein extender in processed foods and spice blends — has no place here, because every single ingredient is whole and straightforward, with nothing hidden in a packet or premade sauce. The pork gets a proper sear in coconut oil first, building a rich crust before the long, low oven braise does its magic over several hours. As it cooks, the braising liquid reduces into a glossy, complex jus that gets stirred right back through the shredded meat. It's the kind of dish that fills the kitchen with an incredible aroma and tastes like it took far more effort than it actually did. Pile it onto whatever you like — the pork is the star.

Preheat the oven to 325°F (165°C). Pat the pork shoulder completely dry with paper towels. In a small bowl, combine the salt, chopped rosemary, turmeric, ginger, and Ceylon cinnamon. Rub the spice mixture all over the pork, pressing it into any crevices.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the pork shoulder and sear, turning with tongs every 3–4 minutes, until deeply browned on all sides, about 12–15 minutes total. Transfer the pork to a plate.
