Slow-braised pulled pork is already the kind of dish that makes people hover near the kitchen, and this version delivers that same irresistible, fall-apart tenderness without a drop of dairy anywhere in sight. The pork shoulder gets rubbed down with fresh rosemary, turmeric, ginger, and Ceylon cinnamon before it's seared in coconut oil until deeply golden — that crust is where so much of the flavor lives. From there, it braises low and slow in a braising liquid built from pomegranate juice, apple cider vinegar, bone broth, and honey, which means every shred of pork gets coated in something tangy, subtly sweet, and genuinely complex. Because the whole thing comes together in a Dutch oven with whole, recognizable ingredients, there's no need to scrutinize labels for hidden butter, cream, or dairy-based thickeners that sneak into so many store-bought or restaurant versions. The result is pork that shreds effortlessly with two forks and soaks up all those braising juices right back in the pot. It's the kind of recipe that works just as well piled onto a bun as it does served over rice or tucked into lettuce wraps — endlessly versatile and genuinely crowd-pleasing.

Preheat the oven to 325°F (165°C). Pat the pork shoulder completely dry with paper towels. In a small bowl, combine the salt, chopped rosemary, turmeric, ginger, and Ceylon cinnamon. Rub the spice mixture all over the pork, pressing it into any crevices.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the pork shoulder and sear, turning with tongs every 3–4 minutes, until deeply browned on all sides, about 12–15 minutes total. Transfer the pork to a plate.
