Slow-braised pulled pork doesn't get much more satisfying than this — fragrant with fresh rosemary, warm spices, and a deeply savory braising liquid built from pomegranate juice, apple cider vinegar, and bone broth. The pork shoulder gets seared in coconut oil until it's beautifully caramelized, then low-and-slow oven braising does all the heavy lifting, coaxing the meat into something impossibly tender and shreddable. Ceylon cinnamon, turmeric, and ginger give the spice rub a subtle warmth that feels complex without being fussy, and the honey rounds out the braising liquid with just a touch of sweetness. Because every ingredient here is whole and straightforward, there's no need to scrutinize labels for hidden nut-based oils, flours, or fillers that can sneak into spice blends and store-bought braises. The finished pork gets tossed back into its own rich juices, so every bite is saucy, aromatic, and deeply flavored. It's the kind of dish that fills your kitchen with an incredible smell for hours and tastes even better than it looks piled high on a plate.

Preheat the oven to 325°F (165°C). Pat the pork shoulder completely dry with paper towels. In a small bowl, combine the salt, chopped rosemary, turmeric, ginger, and Ceylon cinnamon. Rub the spice mixture all over the pork, pressing it into any crevices.
Heat the coconut oil in a Dutch oven over medium-high heat until shimmering. Add the pork shoulder and sear, turning with tongs every 3–4 minutes, until deeply browned on all sides, about 12–15 minutes total. Transfer the pork to a plate.
