Homemade beef jerky hits different when the marinade is built from scratch with real, recognizable ingredients. The combination of apple juice, coconut aminos, and fresh rosemary creates a savory-sweet depth that store-bought versions rarely come close to — and coconut aminos stand in beautifully for soy sauce without any of the soy. A touch of ginger, garlic, and turmeric rounds out the flavor with warmth and just a little earthiness. The beef gets a long soak overnight so every strip is thoroughly infused before it ever hits the oven. Patting the strips completely dry before dehydrating is the small but crucial step that gives you that satisfying chewy texture rather than something steamed and soft. Low and slow in the oven does the rest, and the built-in temperature check ensures the jerky is both safe and perfectly done. It keeps in the fridge for two weeks or the freezer for three months, so making a big batch is absolutely worth it.

Place the beef in the freezer for 30–45 minutes, until it is firm but not frozen solid — this makes slicing much easier. Using a sharp knife, slice the beef against the grain into strips about 1/8-inch (3mm) thick. Pat the strips dry with paper towels and set aside.
In a zip-top bag or shallow dish, whisk together the apple juice, coconut aminos, apple cider vinegar, rosemary, garlic, ginger, turmeric, and salt until combined.
