Homemade beef jerky hits differently when you know exactly what went into it — and this version delivers bold, layered flavor without a single drop of soy sauce or sesame oil. Coconut aminos stand in as the savory backbone of the marinade, bringing that deep umami quality while keeping things completely free of the hidden sesame that sneaks into so many store-bought jerky brands. Fresh rosemary and apple juice give the strips a subtly sweet, herbaceous character that feels genuinely unexpected for a snack you can toss in a bag and take anywhere. The ginger and turmeric add warmth and a little earthiness, rounding out a marinade that's anything but one-note. Slicing the beef after a quick freeze and patting everything dry before it hits the rack are the two small steps that make a real difference in the final texture — chewy and satisfying, not tough or rubbery. A low, slow oven does all the heavy lifting over a few hours, and the result is deeply browned, intensely flavored jerky that stores well in the fridge or freezer for whenever the craving hits.

Place the beef in the freezer for 30–45 minutes, until it is firm but not frozen solid — this makes slicing much easier. Using a sharp knife, slice the beef against the grain into strips about 1/8-inch (3mm) thick. Pat the strips dry with paper towels and set aside.
In a zip-top bag or shallow dish, whisk together the apple juice, coconut aminos, apple cider vinegar, rosemary, garlic, ginger, turmeric, and salt until combined.
