Homemade jerky is one of those snacks that feels almost too good to be true — deeply savory, chewy, and packed with flavor in every strip. The problem with store-bought versions is that they're often loaded with preservatives, synthetic flavor enhancers, and additives that are hard to avoid when you're keeping your routine clean and ingredient-conscious. This recipe sidesteps all of that by building its bold flavor entirely from whole, recognizable ingredients: fresh rosemary, garlic, ginger, apple juice, and coconut aminos in place of conventional soy sauce. The marinade does serious work here. Unsweetened apple juice brings a subtle natural sweetness, the apple cider vinegar tenderizes the beef, and the turmeric and ginger add warmth and depth without anything artificial. After a long soak, the strips go low and slow in the oven until they hit that perfect chewy-but-not-brittle texture. Patting the beef thoroughly dry before dehydrating is the small step that makes a big difference in the final result. Once cooled, you've got a genuinely satisfying, clean-ingredient snack that keeps in the fridge for up to two weeks — or the freezer for even longer.

Place the beef in the freezer for 30–45 minutes, until it is firm but not frozen solid — this makes slicing much easier. Using a sharp knife, slice the beef against the grain into strips about 1/8-inch (3mm) thick. Pat the strips dry with paper towels and set aside.
In a zip-top bag or shallow dish, whisk together the apple juice, coconut aminos, apple cider vinegar, rosemary, garlic, ginger, turmeric, and salt until combined.
