Roasting vegetables at high heat does something almost magical — sweet potato edges caramelize, beets turn jammy and tender, and chickpeas crisp up into little golden bites that make the whole bowl feel satisfying and substantial. Peppery baby arugula forms the base, and once it's lightly dressed in that turmeric-lemon vinaigrette, it wilts just enough to mellow without losing its bite. The dressing itself is a bright, golden emulsion of extra virgin olive oil, fresh lemon juice, honey, ginger, and garlic — the kind of thing you'll want to drizzle on everything. Walnuts add a toasty crunch that ties together the earthy beets and the warm spice of cumin and turmeric running through the roasted vegetables. This is exactly the kind of plant-forward, olive-oil-rich cooking that makes eating well feel genuinely effortless — whole ingredients, bold flavors, nothing processed or complicated. It works beautifully as a hearty lunch or a stunning side that holds its own next to almost anything.

Preheat the oven to 425°F (220°C). Pat the chickpeas dry with paper towels — this helps them crisp in the oven.
Spread the sweet potato and beet cubes on one half of a large rimmed baking sheet and the red onion wedges and chickpeas on the other half. Drizzle all the vegetables with 3 tbsp olive oil, then sprinkle with the turmeric, cumin, salt, and black pepper. Toss each section briefly to coat, keeping the beets and sweet potatoes separate from the chickpeas so the beet color doesn't bleed.
