Preheat the oven to 425°F (220°C). Arrange the sweet potato, carrots, parsnip, and beet in a single layer on a large rimmed baking sheet. Keep the beet pieces on one side of the pan to prevent them from bleeding onto the other vegetables. Drizzle with 2 tbsp of the olive oil, sprinkle with the ½ tsp salt and dried thyme, and toss to coat.
Roast the vegetables for 30–35 minutes, flipping once halfway through, until the edges are caramelized and a fork slides through the thickest pieces without resistance.
