Added sugar is limited on an anti-inflammatory diet. This recipe contains about 1.8 g of added sugar per serving, which is likely acceptable for many following the diet. If you prefer to always avoid honey, please tap it and change its rating to Red.

Full-fat dairy is limited on an anti-inflammatory diet because its saturated fat can be pro-inflammatory for some people, but the amount of ricotta cheese used here (~1 tbsp per serving) is likely fine. If you prefer to always avoid ricotta cheese, please tap it and change its rating to Red.
Preheat the oven to 425°F (220°C). Arrange the sweet potato, carrots, parsnip, and beet in a single layer on a large rimmed baking sheet. Keep the beet pieces on one side of the pan to prevent them from bleeding onto the other vegetables. Drizzle with 2 tbsp of the olive oil, sprinkle with the ½ tsp salt and dried thyme, and toss to coat.
Roast the vegetables for 30–35 minutes, flipping once halfway through, until the edges are caramelized and a fork slides through the thickest pieces without resistance.
