There is something deeply satisfying about a tomato sauce built entirely from scratch, and roasting the tomatoes first takes the flavor somewhere a store-bought jar simply cannot go. The high heat caramelizes the edges, collapses the plum tomatoes into jammy, concentrated sweetness, and turns the onion and garlic golden and mellow before a single drop of liquid hits the blender. Fresh basil, dried oregano, a pinch of red pepper flakes, and a subtle warmth from turmeric round everything out into a sauce that tastes complex but comes together with minimal effort. Every ingredient here is straightforward pantry and produce staple — no hidden nut-based thickeners, no mystery additives, just olive oil, vegetables, and herbs doing exactly what they should. The whole thing blends silky smooth and then simmers down to a rich, slightly thickened consistency that clings beautifully to pasta, pizza dough, or anything else you want to ladle it over. It also freezes exceptionally well, so making a big batch and stashing portions for later is absolutely worth it.

Preheat the oven to 425°F (220°C). Arrange the tomato halves cut-side up on a large rimmed baking sheet. Scatter the onion wedges and unpeeled garlic cloves around the tomatoes. Drizzle with 3 tbsp of the olive oil and sprinkle with the salt, black pepper, and red pepper flakes.
Roast on the center rack for 40–45 minutes, until the tomatoes are deeply caramelized at the edges, collapsed, and beginning to char in spots, and the onion wedges are softened and golden at the tips.
