Roasting tomatoes low and slow — well, hot and patient — is the secret to a sauce that tastes like it simmered all day on a Sunday stove. Plum tomatoes go into the oven cut-side up alongside onion wedges and whole unpeeled garlic cloves, and by the time they come out, the edges are caramelized, slightly charred, and absolutely packed with concentrated flavor. A pinch of turmeric adds a subtle warmth and golden depth that sets this sauce apart from anything you'd pour out of a jar. Fresh basil, dried oregano, and a hit of red pepper flakes round everything out before it all gets blended into something silky and vibrant. Because every single ingredient here is plant-based, there's zero concern about meat-based broths or hidden animal proteins sneaking into your sauce — what you see is exactly what you get. It works beautifully tossed with pasta, spooned over roasted vegetables, or used as a base for shakshuka or pizza. Once you make it this way, going back to store-bought is genuinely hard to justify.

Preheat the oven to 425°F (220°C). Arrange the tomato halves cut-side up on a large rimmed baking sheet. Scatter the onion wedges and unpeeled garlic cloves around the tomatoes. Drizzle with 3 tbsp of the olive oil and sprinkle with the salt, black pepper, and red pepper flakes.
Roast on the center rack for 40–45 minutes, until the tomatoes are deeply caramelized at the edges, collapsed, and beginning to char in spots, and the onion wedges are softened and golden at the tips.
