Slow-roasted cherry tomatoes have a way of transforming into something almost magical — deeply caramelized, jammy, and rich in a way that fresh tomatoes simply can't match. This compote builds that intensity with smashed garlic, dried oregano, a pinch of turmeric, and an optional hit of red pepper flakes, all brought together with a drizzle of honey and torn fresh basil at the end. The oven does most of the heavy lifting, coaxing the tomatoes into a thick, rustic spread that's anything but ordinary. Because every ingredient here is straightforwardly plant-based, there's no need to scrutinize labels or swap anything out — it's naturally meat-free without any compromise on flavor. Serve it warm over crusty bread, spoon it alongside eggs, stir it into pasta, or use it as a bold base for flatbreads and grain bowls. The texture is intentionally left a little rough and chunky, so it feels homemade in the best possible way rather than like something from a jar.
