Romanesco is one of those vegetables that looks almost too beautiful to eat — those spiraling fractal florets turn a deep, caramelized gold in a hot oven, and the flavor is nuttier and more complex than regular cauliflower. This dish leans into that natural richness by finishing everything in a skillet of brown butter toasted with hazelnuts, sliced garlic, and a pinch of red pepper flakes. Every ingredient here is whole and unprocessed, which means there are zero hidden emulsifiers to worry about — no lecithins, no mono- and diglycerides, none of the additives that sneak into packaged sauces or store-bought finishing butters. The lemon juice and zest cut right through the richness at the end, keeping the whole thing bright and balanced rather than heavy. It comes together in one sheet pan and one skillet, so cleanup is minimal and the process is genuinely straightforward. Scatter some fresh parsley over the top before serving and it looks like something you'd order at a nice restaurant — but you made it at home with nothing but real, clean ingredients.

Preheat the oven to 425°F (220°C). Arrange the romanesco florets in a single layer on a large sheet pan. Drizzle with the olive oil, sprinkle with the salt and black pepper, and toss to coat evenly, then spread back into a single layer.
Roast for 22–26 minutes, flipping once halfway through, until the florets are deeply golden at the edges and a knife tip slides through the thickest part with no resistance.
