Colorful, fragrant, and deeply satisfying, this sheet pan dish brings together tender zucchini, sweet bell peppers, caramelized onion, juicy cherry tomatoes, and lightly crisped chickpeas in one glorious roast. The warm spice blend of turmeric, cumin, and smoked paprika gives everything a golden, earthy depth that feels both comforting and vibrant. For anyone navigating a citric acid sensitivity, Mediterranean-inspired cooking can be tricky since many spice blends, canned goods, and condiments sneak in citric acid as a preservative ā but every ingredient here is straightforward and easy to vet. The chickpeas are simply drained and rinsed, the seasoning is built from whole spices you control, and the only bright note comes from a small squeeze of fresh lemon juice at the very end. Roasting at high heat on a single layer sheet pan is the real secret ā it drives off moisture and coaxes caramelized edges rather than steaming everything into mush. A scatter of fresh flat-leaf parsley and optional crumbled feta finishes the dish with freshness and a little salty richness. It works beautifully as a standalone vegetarian main or alongside grains, and the leftovers reheat wonderfully the next day.
