Colorful, deeply spiced, and satisfying in the best possible way, this sheet pan dish is the kind of weeknight dinner that looks like you put in way more effort than you actually did. Zucchini, yellow squash, two kinds of bell pepper, red onion, and cherry tomatoes all roast together until caramelized at the edges, while chickpeas crisp up just enough to add a little texture to every bite. Turmeric is the real star of the spice blend here ā anti-inflammatory and earthy, it pairs beautifully with cumin and smoked paprika to create layers of warm, complex flavor without any sugar or refined ingredients that can be problematic for those managing yeast overgrowth. A splash of fresh lemon juice at the end brightens everything up, and a scatter of flat-leaf parsley adds a clean, herby finish. The optional feta is a nice touch if your current protocol allows for it, but the dish holds its own without it. Everything comes together on one pan, which means minimal cleanup and maximum flavor ā a genuinely easy win for any night of the week.
