This soup is deeply comforting — the kind of bowl that feels like it's actually doing something good for you while you eat it. Roasting a whole head of garlic before it ever hits the pot transforms it into something sweet, mellow, and almost buttery, which gives the broth a richness that's hard to believe comes from such a short ingredient list. Bone-in chicken thighs are seared first for color and depth, then simmered low and slow until the meat shreds effortlessly into the broth. Sweet potato and carrots add body and a gentle natural sweetness, while fresh ginger and turmeric bring warmth without relying on any of the nightshade spices that are off the table on this protocol. A partial blend with an immersion blender creates that creamy, velvety texture before a full can of coconut milk is stirred in at the end — no dairy required, no compromises on richness. A splash of apple cider vinegar at the finish brightens everything up and keeps the flavors from feeling flat. Makes four generous servings, and it reheats beautifully the next day.

Preheat the oven to 400°F (205°C). Place the head of garlic cut-side up in a small baking dish or foil packet, drizzle with 1 tsp olive oil, and wrap tightly in foil. Roast for 40–45 minutes, until the cloves are deeply golden, completely soft, and fragrant. Set aside to cool slightly, then squeeze the cloves out of their skins into a small bowl and mash into a smooth paste with a fork.
While the garlic roasts, pat the chicken thighs dry with paper towels and season all over with 1/2 tsp of the salt. Heat 1 tbsp olive oil in a large Dutch oven over medium-high heat until shimmering. Add the chicken thighs skin-side down and sear, undisturbed, for 5–6 minutes, until the skin is deep golden brown and releases easily from the pot. Flip and sear the second side for 3 minutes. Transfer to a plate and set aside — the chicken will finish cooking in the broth.
