Preheat the oven to 400°F (205°C). Slice the top ¼ inch off each garlic head to expose the cloves, place each head cut-side up on a small piece of foil, drizzle each with 1 tsp olive oil, and wrap tightly. Set the foil packets on a baking sheet and roast for 40–45 minutes, until the cloves are deeply golden and completely soft when pressed.
While the garlic roasts, toss the celery root cubes with 1 tbsp olive oil and ½ tsp salt on the same baking sheet (or a second one). Spread in a single layer and roast alongside the garlic for 30–35 minutes, turning once halfway through, until the edges are golden and the cubes are tender when pierced with a fork.
