This chilled soup is the kind of thing you make once and immediately want to keep on rotation all summer long. Creamy avocado and cool cucumber form the base, blended completely smooth with roasted garlic, fresh parsley, mint, and a little grated ginger for a flavor that's bright, herbaceous, and surprisingly complex. Roasting the garlic low and slow until the cloves are deeply golden and jammy is the move that makes everything come together — it adds a mellow, almost buttery depth that raw garlic simply can't deliver. Apple cider vinegar gives the whole bowl a gentle lift without any nightshades or seed-based ingredients that can be tricky to navigate on an elimination-style protocol. Every single ingredient here is clean and whole-food, so there's no label-reading stress or ingredient swaps required. It serves four and gets even better after an hour in the fridge, making it a smart make-ahead option for warm-weather lunches or a starter that genuinely impresses.

Preheat the oven to 400°F (205°C). Place the garlic head cut-side up on a small piece of foil, drizzle with 1 tsp olive oil, and wrap tightly. Set on a baking sheet and roast for 35–40 minutes, until the cloves are deeply golden and completely soft when pressed.
Remove the garlic from the oven and let it cool, still wrapped, for 10 minutes. Unwrap and squeeze the softened cloves out of their skins into a small bowl — you should have about 2 tbsp of roasted garlic paste.
