Roasted butternut squash forms the silky backbone of this soup, deepened with caramelized edges from a hot oven and blended until velvety smooth. Onion, garlic, fresh ginger, turmeric, and Ceylon cinnamon build a warm, fragrant base, while full-fat coconut milk lends richness and a bright hit of apple cider vinegar keeps the whole bowl balanced instead of flat. It's a one-pot, mostly hands-off soup — roast, sauté, blend, simmer — that comes together with minimal fuss and a whole lot of cozy flavor. A scatter of fresh parsley and a finishing drizzle of olive oil at the end add just the right amount of freshness against all that deep, roasted sweetness. This one fits easily into a vegetarian rotation and is easy to make your own with whatever broth you keep on hand.

Preheat the oven to 400°F (205°C). Place the squash halves cut-side up on a large rimmed baking sheet. Brush the cut surfaces with 1 tbsp of the olive oil and sprinkle with 1/2 tsp of the salt.
Roast the squash for 40–45 minutes, until the flesh is completely tender when pierced with a fork and the cut edges are deeply golden.
