Caramelized Brussels sprouts meet crispy, golden pork belly in a dish that hits every note — savory, smoky, sweet, and just a little tangy. The magic here is in the method: pork belly is rendered down in a skillet until the fat runs clear and the cubes turn deeply golden, then that same pan becomes the base for a quick maple and apple cider vinegar glaze. No emulsifiers, no processed sauces, no store-bought shortcuts — just whole ingredients doing exactly what they're supposed to do. Avoiding emulsifiers can get tricky with glazes and marinades, since so many bottled versions sneak in additives to keep things shelf-stable, but this one builds all its flavor from pure maple syrup, vinegar, and the rendered pork fat left in the pan. The Brussels sprouts go into a hot oven cut-side down, which gives them those irresistible charred edges and a tender interior before they ever meet the glaze. Everything comes together in one final toss, so the sprouts soak up every bit of that sticky, glossy coating. It's the kind of side dish that quietly steals the show at the dinner table.

Preheat the oven to 425°F (220°C). Line a large sheet pan with parchment paper.
Heat a large skillet over medium heat. Add the pork belly cubes and cook, stirring occasionally, for 10–12 minutes until the fat has rendered and the pieces are golden brown and crisp on most sides. Transfer the pork belly to a plate and pour off all but about 1 tablespoon of the rendered fat from the skillet.
