Crispy pork belly, caramelized Brussels sprouts, and a sticky maple-cider glaze — this is the kind of dish that makes people forget they ever had a complicated relationship with vegetables. Every ingredient here is exactly what it says it is: fresh produce, a cut of pork, olive oil, pure maple syrup, and apple cider vinegar. There are no sauces from a bottle, no seasoning packets, and no processed shortcuts that might sneak in synthetic dyes or artificial additives. The pork belly renders down in a skillet until golden and crackling, and the Brussels sprouts go into a hot oven cut-side down so they develop those deeply browned, slightly charred edges that make them genuinely irresistible. The glaze comes together in the same skillet using the reserved pork fat, maple syrup, and vinegar — just a couple of minutes and it thickens into something glossy and complex. A pinch of red pepper flakes at the end adds a gentle kick that plays beautifully against the sweetness. It's a bold, satisfying dish built entirely from whole, recognizable ingredients, and it tastes like something you'd order at a restaurant and immediately want to recreate at home.

Preheat the oven to 425°F (220°C). Line a large sheet pan with parchment paper.
Heat a large skillet over medium heat. Add the pork belly cubes and cook, stirring occasionally, for 10–12 minutes until the fat has rendered and the pieces are golden brown and crisp on most sides. Transfer the pork belly to a plate and pour off all but about 1 tablespoon of the rendered fat from the skillet.
