Crispy pork belly, caramelized Brussels sprouts, and a tangy maple glaze — this is the kind of dish that makes people forget they ever had a complicated relationship with vegetables. Every ingredient here is exactly what it says it is: fresh pork belly, real Brussels sprouts, pure maple syrup, and apple cider vinegar, with no synthetic flavor boosters hiding anywhere in the list. That matters more than you might think, because a lot of bottled glazes and seasoning blends sneak in artificial flavoring agents that can be hard to spot on a label. Cooking the pork belly low and slow in a skillet first renders out the fat and builds a gorgeous, natural fond that becomes the backbone of the glaze — no shortcuts, no additives, just good technique. The maple syrup and vinegar reduce right in that same pan, picking up all those savory browned bits and turning into something sticky, bright, and deeply satisfying. Roasting the sprouts cut-side down at high heat gives you those charred, crispy edges that make this dish genuinely craveable rather than just virtuous. It comes together in one skillet and one sheet pan, which means less cleanup and more time enjoying a plate that tastes far more indulgent than its ingredient list suggests.

Preheat the oven to 425°F (220°C). Line a large sheet pan with parchment paper.
Heat a large skillet over medium heat. Add the pork belly cubes and cook, stirring occasionally, for 10–12 minutes until the fat has rendered and the pieces are golden brown and crisp on most sides. Transfer the pork belly to a plate and pour off all but about 1 tablespoon of the rendered fat from the skillet.
