Deep-roasted beets are the heart of this one, wrapped tight in foil so they steam in their own juices until fork-tender and sweet, then peeled and cut into thick, earthy wedges. They land on a bed of peppery baby arugula with briny Kalamata olives, torn mint, and fresh parsley for a mix of textures and bright, herby flavor in every bite. Optional chopped walnuts bring a nice crunch if you want it. The vinaigrette is whisked from red wine vinegar, Dijon, garlic, and a touch of honey, emulsified with good olive oil until glossy and thick enough to cling to every wedge. It's a vibrant, colorful platter that works beautifully as a starter or a light main, and it's a solid pick for a vegan spread. Serve it right after dressing so the arugula stays crisp and the beets stay glossy.

Preheat the oven to 400°F (205°C). Place each beet on a square of aluminum foil, drizzle with 1 tbsp of the olive oil, and sprinkle with 1/4 tsp salt. Wrap each beet tightly in the foil and arrange on a baking sheet.
Roast the beets until a paring knife slides through the center with no resistance, 45–55 minutes depending on size. Remove from the oven and let the foil packets rest, still sealed, for 10 minutes.
