That deep, jewel-toned dip is almost too pretty to eat — almost. Roasting the beets low and slow in a foil packet coaxes out their natural sweetness, and blending them with chickpeas, tahini, lemon juice, and warm spices like cumin and turmeric creates something that tastes far more complex than the short ingredient list suggests. The result is a silky, vibrantly pink hummus that holds its own as a centerpiece, not just a side thought. Classic hummus is naturally free of animal-derived gelling agents, and every ingredient here — from the canned chickpeas to the fresh lemon juice — keeps it that way without any substitutions or workarounds needed. No store-bought shortcuts means no mystery additives to second-guess, just whole, recognizable ingredients processed into something genuinely craveable. A drizzle of good olive oil, a pinch of smoked paprika, and a scatter of fresh parsley finish the bowl beautifully, while the rainbow of carrot sticks, celery, cucumber, and red bell pepper gives you plenty of satisfying crunch for dipping. It works as a party spread, a weekday snack, or an easy appetizer that always draws a crowd. Once you see how simple the roasting and blending process really is, it's hard to go back to anything from a plastic tub.

Preheat the oven to 400°F (205°C). Place the beets on a sheet of aluminum foil, drizzle with 1 tbsp of the olive oil, and wrap tightly into a packet. Set the packet on the baking sheet and roast until the beets are completely tender when pierced through the center with a knife, 45–55 minutes depending on size.
Remove the beets from the oven and let them rest, still wrapped, for 10 minutes. Unwrap carefully — steam will escape — then rub the skins off with a paper towel or the foil. Roughly chop the beets and set aside to cool slightly.
