That vivid, jewel-toned dip gets its stunning color entirely from real roasted beets — no artificial dyes, no additives, and absolutely nothing you'd need to squint at on a label. For anyone navigating emulsifier-free eating, store-bought hummus can be a minefield of lecithins and stabilizers hiding in plain sight, but this version is built from scratch with ingredients you can actually recognize. Whole chickpeas, fresh lemon juice, tahini, and a drizzle of extra virgin olive oil do all the work of creating that silky, creamy texture — no synthetic binders required. Roasting the beets low and slow in foil coaxes out a natural sweetness that balances the earthiness of the tahini beautifully. A little ice water blended in at the end is the only trick you need for a smooth, spreadable consistency that rivals anything from a tub. The rainbow of fresh crudités alongside — crisp carrots, celery, cucumber, and red bell pepper — makes this feel like a proper spread worth setting out for guests or just a very good Tuesday snack.

Preheat the oven to 400°F (205°C). Place the beets on a sheet of aluminum foil, drizzle with 1 tbsp of the olive oil, and wrap tightly into a packet. Set the packet on the baking sheet and roast until the beets are completely tender when pierced through the center with a knife, 45–55 minutes depending on size.
Remove the beets from the oven and let them rest, still wrapped, for 10 minutes. Unwrap carefully — steam will escape — then rub the skins off with a paper towel or the foil. Roughly chop the beets and set aside to cool slightly.
