That vivid, almost jewel-toned pink color alone is enough to stop a dinner party in its tracks. Roasting the beets low and slow in a foil packet coaxes out their natural sweetness, and when blended with chickpeas, tahini, lemon juice, and warm spices like cumin and turmeric, the result is a hummus that's earthy, bright, and genuinely addictive. The ice water trick — drizzled in while the processor runs — is what takes the texture from grainy to silky smooth, so don't skip it. A swirl of olive oil and a dusting of smoked paprika on top make it look like something you'd order at a trendy restaurant, but it comes together entirely from pantry staples and fresh produce. The crudités spread of carrots, celery, cucumber, and red bell pepper gives you the perfect crunch to scoop up every last bit. There are no nuts anywhere in this recipe — the creaminess comes entirely from tahini and the chickpeas themselves — so you can serve it confidently at gatherings without worrying about what's hiding in a store-bought dip. It works equally well as a weeknight snack, a party centerpiece, or a meal-prep staple that keeps beautifully in the fridge.

Preheat the oven to 400°F (205°C). Place the beets on a sheet of aluminum foil, drizzle with 1 tbsp of the olive oil, and wrap tightly into a packet. Set the packet on the baking sheet and roast until the beets are completely tender when pierced through the center with a knife, 45–55 minutes depending on size.
Remove the beets from the oven and let them rest, still wrapped, for 10 minutes. Unwrap carefully — steam will escape — then rub the skins off with a paper towel or the foil. Roughly chop the beets and set aside to cool slightly.
