This vibrant, jewel-toned dip is the kind of thing that stops people mid-conversation the moment it hits the table. Roasted beets bring a natural sweetness and earthy depth, while garlic slow-roasted right alongside them mellows into something almost buttery. Blooming turmeric and ginger in warm olive oil before blending is a small step that makes a big difference — it coaxes out every bit of warmth and fragrance those spices have to offer. Coconut cream stands in for the dairy you'd find in a conventional dip, giving the finished texture a silky, luscious body that you'd never guess was anything other than indulgent. A hit of apple cider vinegar and fresh lemon juice keep everything bright and balanced so no single flavor dominates. This protocol can make party-friendly snacking feel like a minefield, but this dip sidesteps all the usual problem ingredients without any compromise on flavor. It serves six and works beautifully at room temperature or straight from the fridge, so it's just as practical for meal prep as it is for entertaining.

Preheat the oven to 400°F (205°C). Place the beets and unpeeled garlic cloves on a sheet of aluminum foil, drizzle with 1 tbsp of the olive oil, and wrap tightly into a sealed packet. Set the packet on a baking sheet.
Roast until the beets are completely tender when pierced through the center with a knife, 45–55 minutes depending on size. Remove from the oven and open the foil packet carefully to let the steam escape. Allow to cool for 10 minutes.
