Fresh chives appears here only as an optional add-on, and the recipe uses just about 1 1/4 tablespoons per serving, which is likely fine for most people with GERD. If you prefer to always avoid fresh chives, please tap it and change its rating to Red.
Preheat the oven to 400°F (205°C). Toss the beets with 1 tbsp olive oil and 1/4 tsp salt, then wrap each beet individually in parchment paper and place on the baking sheet. Roast for 40–50 minutes, until a skewer or knife slides through the center with no resistance.
Remove the beets from the oven and let them cool for 10 minutes. Unwrap, then rub the skins off with a paper towel. Cut each beet into 6–8 wedges and set aside.
