The reverse sear method is one of the best-kept secrets for getting a steakhouse-quality crust at home, and it works beautifully here. Starting low and slow in a 250°F oven gives you edge-to-edge even cooking before the cast iron ever gets involved, so you're not fighting a grey band of overcooked meat around the outside. The brief but intense sear at the end locks in that deep mahogany crust that makes a ribeye look and taste like it came off a professional grill. Butter does make a brief appearance during the basting step, but the quantity is small and the exposure is short — for many people managing lactose sensitivity, this level is well within a comfortable threshold. If you're particularly sensitive, you can swap in a lactose-free butter or a high-quality dairy-free alternative without changing the technique at all. The thyme and garlic infuse the fat as it foams, so the aromatics do a lot of the heavy lifting regardless. Bone-in ribeyes bring serious flavor on their own, and the simple seasoning of kosher salt and coarse black pepper lets the beef shine without any sauces or marinades that might hide unwanted dairy ingredients. A pinch of flaky sea salt at the end is the only finishing touch this steak really needs.

Heat the oven to 250°F (120°C). Pat the ribeyes completely dry with paper towels, then season all over — top, bottom, and edges — with the kosher salt and coarsely ground black pepper. Set the steaks on a wire rack placed over a rimmed baking sheet.
Transfer the baking sheet to the oven and roast until an instant-read thermometer inserted into the thickest part of each steak reads 115°F (46°C) for medium-rare, about 40–50 minutes depending on thickness. Remove from the oven and let the steaks rest on the rack while you heat the skillet.
