Few cuts of beef deliver the kind of satisfaction a thick, well-marbled ribeye does, and this low-and-slow oven method followed by a screaming-hot cast iron sear is genuinely one of the best ways to cook one. The reverse sear technique gives you edge-to-edge even doneness before you ever touch the skillet, so there's no gray band of overcooked meat — just a deep mahogany crust and a rosy, tender interior all the way through. Because the ingredient list is so clean — salt, pepper, butter, garlic, fresh thyme — there's no reason to reach for a bottled marinade or seasoning blend loaded with sweeteners and additives you'd rather avoid. Everything that makes this steak taste incredible comes from real, whole ingredients and proper technique, not from a label you have to scrutinize at the grocery store. The butter basting step at the end is where the magic really happens: tilting the pan and spooning that foamy, herb-and-garlic-scented butter over the steaks continuously builds flavor in a way that feels almost restaurant-level. A pinch of flaky sea salt at the end is the only finishing touch it needs. This is the kind of recipe you'll come back to every time you want to do a great piece of beef justice.

Heat the oven to 250°F (120°C). Pat the ribeyes completely dry with paper towels, then season all over — top, bottom, and edges — with the kosher salt and coarsely ground black pepper. Set the steaks on a wire rack placed over a rimmed baking sheet.
Transfer the baking sheet to the oven and roast until an instant-read thermometer inserted into the thickest part of each steak reads 115°F (46°C) for medium-rare, about 40–50 minutes depending on thickness. Remove from the oven and let the steaks rest on the rack while you heat the skillet.
