A great pan sauce is one of those kitchen skills that makes everything taste restaurant-worthy, and this red wine version is deeply savory, glossy, and built almost entirely from the fond left behind in your skillet. Shallots soften in butter, dry red wine reduces into something syrupy and complex, and beef stock brings it all together into a sauce that clings beautifully to every slice. The cold butter finish — added piece by piece off a rolling boil — is the move that gives it that silky, emulsified sheen you see in steakhouse cooking. Because the ingredient list is straightforward pantry and produce staples, there's no need to scan labels for hidden nut-based thickeners or almond-derived finishing oils that sometimes sneak into store-bought sauces and spice blends. Everything here is exactly what it looks like: wine, stock, aromatics, and butter. Spoon it over a rested steak or a Sunday roast and it genuinely elevates the whole plate with very little extra effort.

After removing a seared steak, chop, or roast from the skillet, pour off all but about 1 tbsp of the drippings, leaving the fond (the browned bits) intact on the pan bottom. Set the skillet over medium heat.
Add 1 tbsp butter and the shallots to the skillet and cook, stirring frequently, until the shallots are softened and translucent, about 2–3 minutes.
