Fresh raspberries and real lemon juice are the stars here, and together they create a drink that looks stunning and tastes even better. A quick homemade raspberry syrup — made by simmering berries with water and maple syrup until deeply red and slightly thickened — gives this mocktail a richness that no bottled mixer can match. Once strained and cooled, it layers beautifully over ice with bright citrus and chilled sparkling water for a fizzy, jewel-toned glass that feels genuinely celebratory. Every single ingredient is straightforward and naturally free from tree nuts, so there's no label-scanning or cross-contamination stress to worry about. It's the kind of drink you can confidently serve at a party or a casual weekend brunch without a second thought. A lemon slice and a sprig of fresh mint on the rim take it from simple to seriously impressive in about thirty seconds.

Combine the raspberries, water, and maple syrup in a small saucepan over medium heat. Cook, stirring occasionally and pressing the berries against the side of the pan with a spoon, until the raspberries have completely broken down and the liquid is deep red and slightly thickened, about 6–8 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a heatproof bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much syrup as possible. Discard the solids. Let the syrup cool to room temperature, about 20 minutes, or speed it up by setting the bowl over an ice bath.
