Bright, tangy, and absolutely gorgeous in the glass, this sparkling drink is built around a homemade raspberry syrup that you'll want to keep stocked in your fridge all season long. Fresh raspberries are simmered down with water and maple syrup until the mixture turns a deep, jewel-toned red — then strained smooth for a syrup that's intensely fruity without any artificial sweetness. Squeezed lemon juice brings a sharp citrus punch that balances the berries perfectly, and chilled sparkling water ties it all together with a satisfying fizz. The whole thing comes together in four tall glasses over ice, finished with a lemon slice and a sprig of fresh mint if you want to make it look as good as it tastes. It's naturally plant-based and completely free of anything from the sea, which makes it a no-brainer crowd-pleaser that works for every guest at the table. Serve it at a summer gathering, a weekend brunch, or honestly just a Tuesday afternoon when you want something that feels a little special.

Combine the raspberries, water, and maple syrup in a small saucepan over medium heat. Cook, stirring occasionally and pressing the berries against the side of the pan with a spoon, until the raspberries have completely broken down and the liquid is deep red and slightly thickened, about 6–8 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a heatproof bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much syrup as possible. Discard the solids. Let the syrup cool to room temperature, about 20 minutes, or speed it up by setting the bowl over an ice bath.
