Bright, tangy, and beautifully crimson, this sparkling drink is the kind of thing that looks like it came from a fancy cocktail bar but comes together with just a handful of wholesome ingredients. A quick homemade raspberry syrup — made by simmering fresh berries with water and maple syrup — gives the drink its jewel-toned color and natural sweetness without any refined sugar or artificial flavoring. Squeezed lemon juice adds a zippy citrus punch that balances the berry richness perfectly, and chilled sparkling water brings the whole thing to life with a satisfying fizz. Avoiding nightshades is usually a savory-cooking challenge, but refreshing drinks can still trip people up with unexpected additives or flavored syrups that sneak in problematic botanicals — here, every ingredient is clean and straightforward. The syrup can be made ahead and stashed in the fridge, so assembly is just a matter of pouring and garnishing when guests arrive. A sprig of fresh mint and a lemon wheel on the rim make it feel genuinely festive without any extra effort. Whether you're hosting a crowd or just treating yourself on a warm afternoon, this mocktail delivers serious flavor with zero compromise.

Combine the raspberries, water, and maple syrup in a small saucepan over medium heat. Cook, stirring occasionally and pressing the berries against the side of the pan with a spoon, until the raspberries have completely broken down and the liquid is deep red and slightly thickened, about 6–8 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a heatproof bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much syrup as possible. Discard the solids. Let the syrup cool to room temperature, about 20 minutes, or speed it up by setting the bowl over an ice bath.
