Tart, fizzy, and brilliantly pink, this mocktail is the kind of drink that makes any occasion feel a little more special — no bar cart required. The homemade raspberry syrup is the real star here: fresh berries are simmered down with maple syrup until the liquid turns a deep, jewel-toned red that tastes as gorgeous as it looks. Using maple syrup instead of honey means the sweetness is completely plant-based, so anyone avoiding bee-derived ingredients can sip freely without second-guessing the recipe. Fresh lemon juice keeps things bright and tangy, while chilled sparkling water adds that satisfying effervescence right at the end. A gentle stir preserves the bubbles, and a lemon slice or sprig of mint on the rim takes the presentation from casual to genuinely impressive. It's refreshing, crowd-pleasing, and surprisingly easy to pull off for a batch of four.

Combine the raspberries, water, and maple syrup in a small saucepan over medium heat. Cook, stirring occasionally and pressing the berries against the side of the pan with a spoon, until the raspberries have completely broken down and the liquid is deep red and slightly thickened, about 6–8 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a heatproof bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much syrup as possible. Discard the solids. Let the syrup cool to room temperature, about 20 minutes, or speed it up by setting the bowl over an ice bath.
