Bright, tangy, and deeply refreshing, this sparkling mocktail is built around a homemade raspberry syrup that you simmer down from fresh berries and maple syrup — no artificial flavors, no mystery additives. The syrup gets strained until it's silky smooth and a gorgeous deep red, then paired with freshly squeezed lemon juice and chilled sparkling water for a drink that feels genuinely special. So many store-bought mocktails and flavored sparkling drinks sneak in ginger as a background note or digestive boost, but every single ingredient here is completely free of it. The whole thing comes together in well under an hour, and the syrup can be made ahead so assembly is just a quick pour and stir. Served over ice with a lemon slice and a sprig of fresh mint, it looks like something you'd order at a nice restaurant. It's a crowd-pleaser for anyone avoiding certain spices without wanting to sacrifice flavor or presentation.

Combine the raspberries, water, and maple syrup in a small saucepan over medium heat. Cook, stirring occasionally and pressing the berries against the side of the pan with a spoon, until the raspberries have completely broken down and the liquid is deep red and slightly thickened, about 6–8 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a heatproof bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much syrup as possible. Discard the solids. Let the syrup cool to room temperature, about 20 minutes, or speed it up by setting the bowl over an ice bath.
