Bright, tangy, and beautifully ruby-red, this sparkling drink is the kind of thing that looks like it came from a fancy cocktail bar but comes together with just a handful of real ingredients. The homemade raspberry syrup is the star — fresh berries, water, and maple syrup are simmered down until thick and deeply colored, then strained into a silky, jewel-toned base that tastes nothing like the artificial stuff. Because everything here is made from scratch with whole, plant-based ingredients, there's zero need to scrutinize labels for hidden animal-derived additives that can sneak into store-bought syrups and flavored mixers. Fresh lemon juice keeps things bright and tart, while chilled sparkling water adds that satisfying fizz. A gentle stir is all it takes to bring it together without losing the bubbles. Garnished with a lemon slice and a sprig of fresh mint, it's genuinely stunning in a glass and perfect for brunches, celebrations, or any time you want something that feels a little special.

Combine the raspberries, water, and maple syrup in a small saucepan over medium heat. Cook, stirring occasionally and pressing the berries against the side of the pan with a spoon, until the raspberries have completely broken down and the liquid is deep red and slightly thickened, about 6–8 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a heatproof bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much syrup as possible. Discard the solids. Let the syrup cool to room temperature, about 20 minutes, or speed it up by setting the bowl over an ice bath.
