Bright, tangy, and beautifully pink, this sparkling drink is the kind of thing that makes any occasion feel a little more special — no bar cart required. The star is a homemade raspberry syrup cooked down with fresh berries, water, and maple syrup until it turns a deep, jewel-toned red and coats the back of a spoon. Strained smooth and layered over ice with fresh lemon juice and chilled sparkling water, it delivers a perfectly balanced sweet-tart fizz in every sip. Since everything here is built from whole fruits, citrus, and a natural sweetener, there's zero guesswork about what's actually in your glass. Garnished with a lemon slice and a sprig of fresh mint, it looks stunning on a table without any extra effort. It's an ideal crowd-pleaser for gatherings where guests have a range of dietary needs, since it's naturally free from anything seafood-adjacent — no hidden broths, no sneaky additives, just clean, vibrant ingredients. Make the syrup ahead of time and assembly takes only minutes.

Combine the raspberries, water, and maple syrup in a small saucepan over medium heat. Cook, stirring occasionally and pressing the berries against the side of the pan with a spoon, until the raspberries have completely broken down and the liquid is deep red and slightly thickened, about 6–8 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a heatproof bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much syrup as possible. Discard the solids. Let the syrup cool to room temperature, about 20 minutes, or speed it up by setting the bowl over an ice bath.
